We imagine that summer kicking off as pictured in Dazed and Confused and ending like One Flew Over the Cuckoo’s Nest. \nUS Beef consumption reached an all time high of 89 pounds per person in 1976 \nThat number declined drastically to 56 pounds per person in 2022 while the chicken has crossed the road to 119 pounds per person (includes Turkey). \nThis\, our hungry and parched friends\, is unacceptable. Red meat is our foundation and no where on earth is this cornerstone of our diet more celebrated than in Chicago on a cold and wintry night where the faint sounds of laughter\, music and the beating of tables reverberates down from the Marunde Ballroom at the Dank Haus across the Brown Line El tracks and into the soul of the city of big shoulders. \nThe shark in Jaws\, affectionately called Bruce after Steven Speilbergs lawyer had the right idea.
