Esmero Chicago: Alinea Group’s Mexican Tasting Residency at Charlie Trotter’s

Esmero Chicago is The Alinea Group’s limited-run Mexican tasting residency at 816 W. Armitage Avenue in Lincoln Park, inside the former Charlie Trotter’s. Executive chef Adair Canacasco is running a 14-course menu that starts at $195 a person. Booking is Tock only. The residency is dated through November 22, 2026. Closed Monday and Tuesday.

That is the news. The rest is access. Resy published a long August dispatch from inside the room and still does not hold the inventory. The official site has one real button — Book A Table — and it goes to Tock. Dining Room is $195 plus a $30-per-person deposit for parties of two to six. Kitchen Table is $215, party of four only, at 5:30 and 8:30 p.m. It is not a two-top. Alinea Group’s 20% service charge applies. There is no Yelp sample yet and no Chicago Michelin mark for Esmero. Do not transfer Alinea’s stars. Fall 2026 is the window that is actually on sale.

What is Esmero Chicago?

Esmero Chicago is a limited-run Mexican tasting from The Alinea Group, led by chef Adair Canacasco. The official site spells it lowercase — esmero — and treats the name as the brief. The group’s July 6, 2026 announcement said esmero means care, intention, and uncompromising attention to detail, and that the ambition is not to redefine Mexican cuisine but to contribute to its continuing story.

It is not Esmé. Jenner Tomaska’s Michelin-starred restaurant on North Clark is a different spelling, operator, and room. This piece is about 816 W. Armitage.

Ari Bendersky’s Resy Right This Way feature of August 26, 2026 called it a modern Mexican dinner party inside Trotter’s, with optional wine and non-alcoholic pairings and the chance of a surprise mezcal tasting. Pairings on the booker sit in a $65–$155 band and are selected on site.

The homepage is a brand page, not a menu. Instagram is @esmerochicago. Crain’s noted a limited-time Alinea Group restaurant inside the old Trotter’s on July 21, 2026. Tickets first dropped July 7 on Tock, the day after LinkedIn. Michael Nagrant flagged it on Fooditor’s August 31, 2026 Buzz List.

This is a different product from openings ChiVibe has already covered, including Berenjak Chicago at Soho House and Hooligan Chicago in Logan Square. Those rooms are still waiting on a first public season. Esmero is already seating, on a clock.

Where is Esmero Chicago, and why does Charlie Trotter’s matter?

816 W. Armitage Ave., Chicago, IL 60614, in Lincoln Park. Former Charlie Trotter’s. Dylan Trotter owns the space. Hours, matching Resy and Tock: Wednesday through Sunday, 5:30 to 9:30 p.m. Closed Monday and Tuesday.

Armitage here is shops and cafes, not the Fulton Market opening circuit. The address is the story. Trotter put a table in a kitchen here, wrote tasting menus daily, and made the room a Chicago fine-dining landmark. Grant Achatz famously left Trotter’s early in his career. That is contextual history — not a star transfer, and not the menu.

The Alinea Group asked Dylan Trotter to host the residency. Resy says the building still feels like Trotter’s: dark-walled reception, Brazilian cherry floors, 20-foot ceilings, burgundy carpet. The one dramatic change in that account is dried heirloom corn over the wine station.

Capacity matters more than nostalgia. As of August 2026, only the first floor is in use — about 56 covers a night, mainly two- and four-tops. Resy reported a planned second-floor expansion of about 40 seats. Until that floor is actually open, plan for the 56.

Who is chef Adair Canacasco?

Adair Canacasco is executive chef. He has been with The Alinea Group about nine to ten years. Born in Mexico City, raised in the American Midwest — Resy says Mexico City until age 12, then Madison, Wisconsin. Prior kitchens: Roister and Fire. He also helmed the M in Big Sky residency in Montana.

Resy’s August interview is the public portrait. Canacasco called it “my house” inside Charlie Trotter’s and talked about family dinner and regional Mexico (Oaxaca, the Yucatán, Veracruz, Hidalgo, Mexico City). Resy put him at about 30. Jason Weingarten, posting July 7 as Alinea Group co-owner, said that after nine years in the group’s kitchens, Canacasco was bringing the residency to 816 W. Armitage.

Read that as a chef-led residency, not Grant Achatz doing Mexican. Alinea is the operator and the Tock machine. The tasting brief is Canacasco’s identity, family memory, and craftsmanship.

How do you book Esmero Chicago?

Tock only: exploretock.com/esmero. The site’s Book A Table button is the same link. There is no Resy inventory and no OpenTable page. Resy wrote the feature. Tock sells the tickets. Walk-ins are not the product.

Tock copy says sales are final and tickets are non-refundable; transfers are allowed. A September 1, 2026 Tock check for a party of two showed an open window through September 27, Wednesday through Sunday only. September 25 dining-room times clustered 5:30–6:30 p.m. and 7:45–8:45 p.m. — no exact 7:00. October and November dates were not in that open window yet. An empty later calendar is unreleased inventory, not proof the residency is sold out.

Both pages say Standard, Reserve, and Non-Alcoholic pairings are selected on site, in a $65–$155 band. Resy’s August breakdown was $65 NA (Chloe Fisher of The Aviary), $75 standard wine (Jon Leopold, leaning Mexican), and $155 reserve. Treat those dollar figures as reported in August, not as a frozen list.

Alinea Group adds a 20% service charge to all restaurant experiences; on Tock it applies to prix-fixe menus and add-ons. Budget it.

Dining Room or Kitchen Table — which one should you book?

If you are two people, book the Dining Room. Do not try to force the Kitchen Table. Tock sells it for parties of four only, at 5:30 and 8:30 p.m. It is not a two-top. ChiVibe’s rule matches the booker: Kitchen Table is a four-top or it is nothing.

Resy said $215 at that table gets the same tasting plus additional bites and a mezcal or tequila tasting, inside Charlie Trotter’s kitchen. That is the immersive ticket, and the scarce one.

Dining Room is the default chase: $195, parties of two to six, first floor, about 56 covers. Second-floor expansion is planned, not current. Book the floor that exists.

For Chicago dining readers used to Resy drops, the muscle memory is wrong here. Open Tock. Pick Dining Room unless you actually have four people and want the kitchen. Wednesday through Sunday only.

What is on the Esmero Chicago tasting menu?

A 14-course tasting. The homepage does not post a standing menu. What follows is reported, not a promise the kitchen runs the same plate tomorrow.

Resy, August 26, 2026, plus the booking notes, flag these as notable:

• Infladita — puffed masa with wagyu tartare, avocado, and caviar
• Lion’s mane mushroom in mole blanco (Resy says this plate started the path for Canacasco at Roister)

Resy also called out a scallop aguachile, corn, tamal, chiles, avocado, and blown-glass plates from Ignite Glass Studios. Do not treat any of this as a printed carte.

Beverage is optional, not bundled into the $195. Pairings $65–$155. Resy said diners start with a non-alcoholic aperitif of tamarind, pineapple, and guajillo even without a pairing, and that a surprise mezcal tasting can land in the dining room. Kitchen Table adds mezcal or tequila tasting on purpose.

How long does the Esmero residency last?

Late July through November 22, 2026. Alinea Group hiring copy and Resy both use that window. LinkedIn went up July 6. Tock tickets dropped July 7. Crain’s July 21 item framed a limited-time restaurant inside the old Trotter’s as opening that month.

November 22 is the hard date on current public copy. Resy noted Canacasco talking about a possible future that looks like Esmero — casual and high-end in the same space — with details still coming. That is aspiration, not a 2027 reservation. If you want this version of the room, the calendar is fall 2026.

Does Esmero Chicago have a Michelin star?

No. Chicago Michelin status for Esmero is none. Alinea’s stars do not transfer. Canacasco’s years in Alinea Group kitchens do not transfer. Esmé on Clark is a different restaurant with its own mark.

Yelp is empty. That is a new-residency fact, not a quality floor and not a reason to drop the chase. The pedigree is the group, a chef with a decade inside those kitchens, and the Trotter’s address. Judge the tasting when you sit it. Do not borrow a star from next door.
